How to Pick Fresh Truffles

Picking the perfect truffle is essential to the success of a truffle dish & I would consider myself highly experienced in the art of truffle selection & consumption!

First of all, there are many different types of truffles and they vary depending on the season. You should be somewhat familiar with the differences between the species if you aren't selecting them by hand so you know what you’re getting!

To test a truffle, pick it up and gently squeeze it. This will release the truffle aroma that it contains. Your goal in selecting a truffle is to pick the one with the strongest scent. Also, make sure that the truffle is dry & firm. Avoid any truffles that seem very wet and squishy.

If you’re planning the quantity of truffle that you will need, a good rule of thumb is to get 5-7 grams per serving which is equivalent to 4-5 servings per ounce. Keep in mind that if you’re selecting a black truffle, one ounce is about the size of a golf ball. To get one ounce of white truffles you will likely need 1-2 truffles.

After you pick your truffles and have some left over, make sure you store them properly.
