Truffle deviled eggs by Chef Frank of Ciel Houston

Yellow truffle cream :

Yellow eggs 100 g

Mayoness 40 g

Sour cream 20 g

Mostrad 20 g

Truffle oil 15 g

Truffle salt 1 g

Lemon juice 3 g

Mix everything together in a bowl

Cook for15 minutes the eggs, cut in half and separate the white and yellow parts of the egg. Use the yolks to make the truffle cream .

Plaiting process :

place half of the egg white on the plate, bathe it with truffle powder, place the yellow truffle, place a dell leaf, then a slice of black truffle and shive.
