Shiitake
Shiitake mushrooms are known for their brown umbrella-shaped caps and sturdy stems. They have a rich, savory flavor with a hint of smokiness and umami. The texture of shiitake mushrooms can vary depending on how they are prepared – they are meaty and chewy when cooked, and slightly softer when dried.

Shiitake Mushroom Stir-Fry
Ingredients:

2 cups Shiitake mushrooms, cleaned and sliced

1 red bell pepper, thinly sliced

1 small carrot, julienned

1 small broccoli crown, cut into florets

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced
-
1 teaspoon ginger, minced

2 green onions, chopped (white and green parts separated)

Sesame seeds for garnish

Cooked rice or noodles for serving
Instructions:

In a small bowl, mix together soy sauce, oyster sauce (if using), and sesame oil to create the sauce.

Heat vegetable oil in a wok or large skillet over high heat.

Add minced garlic and ginger, and sauté for about 30 seconds until fragrant.

Add Shiitake mushrooms and stir-fry for 2-3 minutes until they start to brown.

Add sliced red bell pepper, julienned carrot, and broccoli florets. Stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.

Pour the sauce over the vegetables and mushrooms. Stir-fry for another minute or until the sauce coats the ingredients evenly.

Add the chopped white parts of the green onions and toss to combine.

Remove from heat and serve the stir-fried Shiitake mushrooms and vegetables over cooked rice or noodles.

Garnish with chopped green onion tops and sesame seeds.
