Potato Galette with Smoked Salmon & Kaluga Caviar
for 4 Guests
4 Potato Anna Galettes
8oz Smoked Salmon
1/2 cup Creme Fraiche
Juice of 1 lemon
3 shallot, minced
Chopped fresh dill
Black Pepper to taste
Chopped Fresh Chives
1 or 2 oz of Kaluga Black Caviar or any type of Caviar/Roe you like (Hackleback | Paddlefish | Bowfin | Osetra). You can what ever caviar you desire and that suits your budget. 2 Ounces for 4 Guests is perfect but 1 or more than 2 ounces are fine too. It all depends on your budget.
Cook the frozen Potato Anna in Duck Fat. Seasoned with Salt & Pepper to Taste. Turn them several times until golden crispy. (About 10/15min)
In a bowl mix the shallot, dill and the creme fraiche, half the lemon juice, seasoned with salt and pepper to taste.
Spread the dill cream on each Potato Galette, cover with a slice of smoked salmon, sprinkled with black pepper and the remaining of the lemon juice.
Garnish the chopped Chives and finish with a spoon of Kaluga Black CAviar.
