Alba Clamshell Salad 




  • 1 cup Alba Clamshell mushrooms, cleaned and sliced

  • 2 cups mixed greens (lettuce, arugula, spinach)

  • 1/4 cup cherry tomatoes, halved

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper to taste




  1. In a bowl, combine the mixed greens and cherry tomatoes.

  2. Gently toss in the sliced Alba Clamshell mushrooms.
