1 dozen eggs

2 oz. Salmon roe

6 tbsp of Kewpie mayonnaise

2 tsp of Dijon mustard

1 tsp of Champagne vinegar

½ tsp of Blended mustard seeds

¼ tsp of Cayenne powder or Espelette pepper
-
Paprika powder and chopped chives for garnish (optional)
Directions
Slice the hard-boiled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a bowl.
Mash the yolks with a fork until smooth. Add mayonnaise, Dijon mustard, white wine vinegar, blended mustard seeds, and desired spices. Mix until well combined. Season with salt to taste.
Spoon or pipe the yolk mixture into the egg white halves.
Cut a notch on the underside of the egg white to prevent them from rolling on their sides.
