Ingredients

  • 1 pound fresh fiddlehead ferns, cleaned and trimmed
  • 1 tablespoon neutral oil (avocado or vegetable oil)
  • 2 cloves garlic, finely minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon toasted sesame seeds
  • 2 scallions, thinly sliced
  • Optional: chili crisp or red pepper flakes for heat

Directions

  1. Bring a large pot of salted water to a boil. Add the fiddlehead ferns and blanch for 8–10 minutes until tender. Drain and rinse under cold water to stop the cooking process.
  2. Heat the neutral oil in a large skillet over medium heat. Add the garlic and ginger and cook for about 30 seconds until fragrant, being careful not to burn.
  3. Add the soy sauce, sesame oil, rice vinegar, and honey to the skillet. Stir together until lightly bubbling.
  4. Add the blanched fiddleheads to the pan and toss well to coat in the glaze. Cook for 2–3 minutes until glossy and warmed through.
  5. Transfer to a serving dish and garnish with toasted sesame seeds and sliced scallions. Finish with chili crisp or red pepper flakes if desired. Serve warm as a side dish or over steamed rice.
