Directions
Preheat your oven to 200°F to keep waffles warm as you cook. Preheat your waffle iron to medium-high, and lightly grease it with oil or nonstick spray.
In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl or glass measuring cup, whisk the buttermilk, eggs, and melted butter until smooth.
Pour the wet ingredients into the dry and gently fold together using a rubber spatula—mix until just combined for tender waffles.
Scoop about ½ cup of batter into the preheated waffle iron. Close gently and cook for 4–5 minutes, or until golden brown and crisp. Transfer cooked waffles to a wire rack in the oven to keep warm.
In a large bowl, whisk together flour, cornmeal, baking powder, cayenne pepper, salt, and black pepper.
Working one piece at a time, coat chicken in the flour mixture, dip into buttermilk, then return to the flour mix, pressing firmly to create a crisp outer layer.
In a deep Dutch oven or heavy-bottomed pot, heat vegetable oil to 360°F. Fry chicken in batches, turning occasionally, for about 4–5 minutes or until golden and cooked through.
Transfer to a wire rack set over a baking sheet and keep warm in the oven.
