1/4 cup pasta water (reserved)

Directions
Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/4 cup of pasta water before draining.
In a pan over low heat, melt the butter and stir in the lemon zest.
Add the cooked pasta to the pan, tossing to coat in the butter.
Stir in the parmesan cheese, lemon juice, and reserved pasta water, mixing until creamy.
Plate the pasta and carefully top with the White Sturgeon Caviar.
