Truffle Honey Chicken and Waffles

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon salt
  • 1 ⅔ cups buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter
  • 1 ¼ cups all-purpose flour
  • 1 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon cayenne pepper
  • Salt and ground black pepper to taste
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 2 cups buttermilk
  • 6 cups vegetable oil
  • ¼ cup truffle honey

Directions

  1. Preheat your oven to 200°F to keep waffles warm as you cook. Preheat your waffle iron to medium-high, and lightly grease it with oil or nonstick spray.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl or glass measuring cup, whisk the buttermilk, eggs, and melted butter until smooth.
  3. Pour the wet ingredients into the dry and gently fold together using a rubber spatula—mix until just combined for tender waffles.
  4. Scoop about ½ cup of batter into the preheated waffle iron. Close gently and cook for 4–5 minutes, or until golden brown and crisp. Transfer cooked waffles to a wire rack in the oven to keep warm.
  5. In a large bowl, whisk together flour, cornmeal, baking powder, cayenne pepper, salt, and black pepper.
  6. Working one piece at a time, coat chicken in the flour mixture, dip into buttermilk, then return to the flour mix, pressing firmly to create a crisp outer layer.
  7. In a deep Dutch oven or heavy-bottomed pot, heat vegetable oil to 360°F. Fry chicken in batches, turning occasionally, for about 4–5 minutes or until golden and cooked through.
  8. Transfer to a wire rack set over a baking sheet and keep warm in the oven.
  9. Top each waffle with a piece of hot fried chicken. Drizzle generously with our Truffle Honey for a rich, aromatic finish. Serve immediately.
