Cauliflower Mushroom
Cauliflower mushrooms are unique, large, and pale yellowish mushrooms with a shape reminiscent of cauliflower florets. They have a delicate, nutty flavor and a firm, meaty texture. Cauliflower mushrooms are excellent for absorbing flavors from the ingredients they are cooked with.

Cauliflower Mushroom and Spinach Pasta
Ingredients:

8 oz pasta (such as fettuccine or penne)

1 cup fresh Cauliflower mushrooms, cleaned and sliced

2 cups fresh spinach leaves, washed and chopped

2 tablespoons olive oil

2 cloves garlic, minced
-
1/4 teaspoon red pepper flakes (adjust to taste)

Juice of 1 lemon

Salt and black pepper to taste

Grated Parmesan cheese for serving (optional)

Chopped fresh parsley for garnish
Instructions:

Cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat.

Add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

Add the sliced Cauliflower mushrooms and sauté for about 5-7 minutes until they start to soften and brown.

Stir in the chopped spinach leaves and cook for an additional 2-3 minutes until the spinach wilts.

Squeeze the lemon juice over the mushrooms and spinach. Season with salt and black pepper to taste. Toss to combine.

Add the cooked pasta to the skillet and toss everything together to coat the pasta with the mushroom and spinach mixture.

Cook for another minute or until the pasta is heated through.

Divide the Cauliflower Mushroom and Spinach Pasta among serving plates.
