150g Heavy Cream

Grossane Olive Oil

75g Milk

3 Eggs (Yolks and whites separated)

180g Dark Chocolate (70% cocoa)

75g Milk Chocolate (40% cocoa)

20g Sugar

Flaky Sea Salt

Cocoa Nibs
Directions
In a saucepan, bring the cream and milk to a boil
Off the heat, pour over the chopped chocolates, then whisk until smooth.
Add the egg yolks, mix well.
Beat the egg whites with the sugar until stiff peaks form, then fold into the chocolate mixture.
Pour the chocolate mousse into a bowl, sprinkle with sea salt flakes, cocoa nibs, and drizzle with Olive Oil.
Let rest for 2 hours in the refrigerator before serving.
