8 oz. of fresh Lion’s Mane mushroom

1 Egg or flax egg* (To make a flax egg, combine one tablespoon of flaxseed meal with three tablespoons of water. Refrigerate for about 10 minutes to thicken.)

¾ cup of Panko breadcrumbs

¼ cup of chopped sweet onions

3 tbsp of Kewpie mayo or preferred mayo

1 tbsp of Worcestershire sauce

½ tsp Old Bay Seasoning

1 tsp of Dijon mustard

Chopped Parsley

Salt and Pepper to taste

1-2 tbsp of Oil (Canola, vegetable, or olive oil for frying)

Lemon juice for garnish
Directions
Hand shred the lion’s mane mushroom into small pieces, resembling the texture of flaky crab.
In a large bowl, combine egg (or flax egg), mayonnaise, onion, Worcestershire sauce, Old Bay seasoning, Dijon mustard, finely chopped parsley, salt, and pepper. Mix until fully incorporated.
Add the shredded mushroom to the mixture and blend thoroughly. Incorporate Panko breadcrumbs into the mixture until fully combined.
Form the mixture into 3-4 equal-sized, round, flat patties (approximately ½ to ¾ inch thick).
Heat oil in a sauté pan over medium/high heat. Cook the patties for about 2-3 minutes per side until golden brown and cooked throughout.
Add the optional garnish, a squeeze of lemon, and savor the sensational flavors!
