Ingredients

1 lb. fresh ramps (roots trimmed, stems diced, leaves roughly chopped)

2 tbsp of vegetable, sesame, or a neutral oil

½ cup finely chopped onions

½ tsp chili powder

1 to 2 large eggs

3 cups day old jasmine rice

½ cup frozen corn, peas, or carrots

1 tbsp soy sauce

1 tbsp lemon or lime juice

½ tsp fish sauce (optional, but enhances umami)
Directions
Trim and discard the roots, dice the stems, and roughly chop the leaves of the ramps.
Heat oil in a large pan or wok over medium heat.
Add diced ramp stems and chopped onions to the pan, stirring until fragrant and softened.
Stir in chili powder or your preferred seasoning.
Push the aromatics to one side of the pan and pour in the beaten egg. Stir to scramble.
Add the day-old jasmine rice, breaking up any clumps. Stir in corn or peas and mix well.
Toss in the chopped ramp leaves, allowing them to wilt slightly.
Stir in soy sauce, lemon juice, and a dash of fish sauce. Mix well and serve immediately!
