Ingredients

2 cups miso broth (or broth of choice)

1 pack dried ramen noodles

1/2 packet ramen seasoning (optional) or 1 tsp dashi powder

1/2 tsp red chili flakes (adjust to taste)

8 oz woodear mushrooms, cleaned and sliced

2 tbsp chopped chives
Optional additions

1 soft-boiled egg (seasoned)

2 oz sliced pork (chashu or cooked pork belly)

1 tsp chili paste (adjust to taste)
Directions
In a pot, bring the miso broth to a boil over medium heat. If using, stir in the ramen seasoning packet or dashi powder for extra depth of flavor.
Add the dried ramen noodles to the boiling broth and cook for 3-4 minutes (or as directed on the package). Stir occasionally.
In a separate pot, bring water to a boil. Add the woodear mushrooms and blanch for 4 minutes. Drain and set aside.
Once the noodles are tender, pour the broth and noodles into a serving bowl. Add the blanched woodear mushrooms on top.
Top the ramen with a soft-boiled egg, chopped chives, sliced pork, and a spoonful of chili paste for an extra kick.
Recipe Note
- Add a splash of soy sauce, mirin, or sesame oil for extra umami.
- Try bamboo shoots, nori, or corn for added texture and flavor.
- Simmer eggs for 6-7 minutes, then cool in ice water before peeling and marinate in soy sauce preferably overnight.
- Adjust chili flakes and paste to match your heat preference.
