Three flagship monovarietals from Château d’Estoublon: Bérguette, Grossane & Picholine.
Harvest: Early November until mid-December. Pressed in our mill within 24 hours of harvest.
Conservation: In stainless steel tank, nitrogen cap, controlled temperature room.
Bérguette: extraordinary flavor of artichoke and green hazelnut. It has a certain bitterness with a very characteristic spicy and spicy side. Fans will use it to braise fish, poultry, on leeks, tomatoes, pissaladières. It also gives a lot of flavor to cakes and spice cakes.
Grossane: Aromas of cut grass which give an impression of freshness in the mouth. Its sweetness can be enjoyed as a seasoning on salads, on steamed vegetables with a little balsamic vinegar and on potatoes. Perfect for olive oil ice cream.
Picholine: Powerful, fiery, bitter, it is a flavor enhancer. Very distinctive, it brings out the green taste of our early vegetables, on raw fish in carpaccio as well as on beef tartare with a squeeze of lemon. Excellent in a sorbet or ice cream.
