Description

DR Delicacy’s Bowfin Caviar has a fresh flavor with a distinct ocean taste. Its small, jet black pearls stand out when using in recipes for special occasions. The grains are small and pearly of brownish to jet-black color with glossy and firm eggshell. The Bowfin Black Caviar has a distinctive mildly tangy flavor.

Bowfin does not belong to the Sturgeon family but is a magnificent and inexpensive substitute for sturgeon caviar.

This native American black caviar is harvested from American Bowfin a bony fish from southern US backwaters. Due to its areal the Bowfin Caviar is widely used in the original Cajun cuisine and is well known as Choupique caviar.

Cooking/ Serving

  • Can be served as an appetizer on blinis & crème fraiche
  • and/or with chives and all the other accoutrements
  • Use it to finish a dish from a salad, toasts with foie gras or cheese, over seafood and of course eggs!
  • Do not use silverware as Caviar will absorb its metallic flavor
  • Use mother of pearl or ivory spoons
  • Serve Caviar ice cold 
  • Vodka is a more traditional pairing than champagne due to its antiseptic palette cleansing nature
  • If choosing Champagne, pick a Brut varietal
