Spicy Cajun Caviar is best enjoyed as an appetizer on blinis with crème fraiche or with other accouterments like chives, white onion, or chopped egg white and yolk. When serving, avoid using silverware as caviar will absorb its metallic flavor. Instead, use mother of pearl or ivory spoons.
Serve Spicy Cajun Caviar ice cold for maximum enjoyment. When eating caviar by itself, taste with the tongue and avoid chewing to avoid loss of flavor.
For a traditional Russian pairing, serve with ice-cold vodka, which brings out the distinguished taste of caviar without overpowering it. Champagne is also a great pairing as the bubbles and saltiness of caviar go hand in hand. If caviar is being served as part of a recipe that involves cream or butter, champagne will help clean the palette and refresh the dish. Select a classic style – vintage if possible– and avoid ‘zero dosage’ varieties, which can be too dry and acidic. Rosé complements caviar well too.
