This succulent Iberico Bellota pork loin is crafted from the choicest cut of 100% Iberico pigs, a revered Spanish breed. During the Montanera season (October through February), these pigs double their weight by feasting on acorns and grass, making them the highest quality and most esteemed variety in the world. The outcome is a delectable loin with superb marbling, seasoned with a delicate pimenton. Cured for 70 days using traditional techniques in La Alberca, Spain.
