This unique process, which we pioneered over 15 years ago and continue to use today, enhances the natural smokiness of the roe and makes it a sought-after delicacy. It is perfect for appetizers, canapés, sauces, and as a topping for oysters, bagels with cream cheese, and a variety of meat and seafood dishes.
