Dufour Gourmet is a French Master Charcutier in NYC. He is using all the technics he learned in France to provide you with the Best possible Pate en croute, Merguez, Boudin in the US.

I hope you enjoy his creation as much as we do. BTW we provided Dufour Pate en Croute to Air France Catering for all the flights between Houston and Paris in First and Business. and we all know how picky the French are!


Pate en croute: cocktail size:

with some foie gras. Order a full pate 24oz or a Half 12oz.

One of the most famous charcuterie products in France. A classic, beautiful and tasty pâté topped with a flavorful gelée and baked in a homemade pâte brisée (pastry dough). Serves 10-12.

Ingredients: pork, chicken, chicken livers, duck foie gras, dried Mission Figs, cream, egg, salt, pepper, spices. Pastry dough: flour, butter, eggs yolks, cornstarch, water, salt. *meat/dried fruits subject to change according to seasonality. Allergens: Dairy, Egg, Gluten

Pate de Campagne: our French traditional country-style pâté, a tasteful classic on your charcuterie board. Ingredients: pork, chicken livers, onions, egg, cream, parsley, salt, garlic, spices, nitrite. Allergens: Dairy, Egg.

Duck & Fig Pate: A modern combination of sweet and savory coarsely ground duck pâté perfectly balanced with dry Turkish figs and caramelized shallots in red wine. Ingredients: pork, duck, chicken livers, onions, red wine, dry figs, cream, egg, brandy, salt, spices, nitrite. Allergens: Dairy, Egg.

Pork Rillette: Traditionally made this pork rillettes has a smooth texture and spread perfectly on bread. Similar to the confit method, the meat is seasoned, slow cooked in its own fat and shredded. Prepare your favorite bread, spread rillettes on it, add cornichons or pickles, and serve as an appetizer or enjoy as a light meal. Ingredients: pork, pork fat, herbs, spices.

Duck Foie Gras Pate: Foie gras terrine, made of whole duck livers and lightly seasoned to preserve its rich and buttery taste (keep refrigerated, ready to serve - Avg Weight 7 oz - 195 gr)


Boudin Blanc: A must over the Holidays to serve with mashed potatoes, celeri root puree or like at my house with caramelized apples. Fully Cooked just reheat. Ingredients: pork, milk, egg, cream, salt, port wine, black truffle, pepper, nutmeg. 

Boudin NoirNatural blood sausage made with onions and spices the traditional French way. Fully Cooked. Ingredients: pork blood, onions, pork fat, spices, natural hog casing.

Lamb MerguezFinely ground beef and lamb sausage featuring Middle-Eastern flavors and spiciness in a natural sheep casing. Ingredients: beef, lamb, paprika, salt, olive oil, harissa, oregano, pepper, coriander, mint, cayenne, natural sheep casing (no pork).

Thai ChickenTasty chicken sausage finely ground and flavored with Thai spices like lemongrass, kaffir lime and ginger. Ingredients: chicken, salt, curry paste (w/ shrimp paste), lemongrass, ginger, soy sauce, turmeric, Calabrian pepper, kaffir lime. Allergens: Soy, Shrimp. Pork Free

Chicken ChorizoSpanish-style Chicken Chorizo sausage finely ground and flavored with fine spices like paprika, and cayenne. Ingredients: chicken, olive oil, paprika, cayenne, garlic, spices, natural sheep casing. Pork Free.

Pork & CheddarFlavorful coarsely ground sausage made with pork belly meat, Vermont cheddar cheese and caramelized onions with molasses. Ingredients: pork, cheddar cheese, onions, salt, molasses, pepper, garlic, cayenne. Allergens: Dairy

Pork & BaconPork belly sausage coarsely ground made with smoky bacon, mushrooms and caramelized onions reduced with red wine. Ingredients: pork, bacon, red wine, mushrooms, onions, chicken stock, port wine, salt, pepper, natural hog casing.
