Mushroom Mac & Cheese

2-4 Servings


8oz of Mix Mushrooms

4 c. of cooked Macaroni

1 Tbsp of olive oil

4 Tbsp of butter

4 Tbsp of flour

1 tsp of salt

2 c. milk

1 c. shredded cheddar cheese

1 c. shredded mozzarella cheese

¼ c. Italian breadcrumbs

  • Preheat the oven to 350ᵒ
  • Cut mushrooms into bite-sized pieces, saute in olive oil and set aside
  • Melt the butter in a large saucepan, whisk in flour, cook for 1-2 minutes being careful not to brown the flour
  • Add salt and wisk in the cold milk
  • Bring to a slow boil over medium-high heat, continuing to wisk to prevent lumps. Simmer for 5 minutes
  • Remove from heat, stir in cheese, mushrooms & pasta
  • Transfer mixture to 3-quart baking dish, sprinkle with breadcrumbs
  • Bake for 30 minutes
