Mushroom Mac & Cheese

2-4 Servings
Ingredients:
8oz of Mix Mushrooms
4 c. of cooked Macaroni
1 Tbsp of olive oil
4 Tbsp of butter
4 Tbsp of flour
1 tsp of salt
2 c. milk
1 c. shredded cheddar cheese
1 c. shredded mozzarella cheese
¼ c. Italian breadcrumbs
- Preheat the oven to 350ᵒ
- Cut mushrooms into bite-sized pieces, saute in olive oil and set aside
- Melt the butter in a large saucepan, whisk in flour, cook for 1-2 minutes being careful not to brown the flour
- Add salt and wisk in the cold milk
- Bring to a slow boil over medium-high heat, continuing to wisk to prevent lumps. Simmer for 5 minutes
- Remove from heat, stir in cheese, mushrooms & pasta
- Transfer mixture to 3-quart baking dish, sprinkle with breadcrumbs
- Bake for 30 minutes
