Puree Challenge -​GUAVA PIÑA COLADA

1 Pineapple, cored and diced

250 grams sugar

100 grams Guava Purée

35 grams Citric Acid

6oz Hot Water

Dark or Aged Rum

Coconut Syrup

Edible Gold Leaf

Morello Cherries

Guava and Pineapple Cordial

90 grams guava purée

80 grams pineapple

25 grams citric acid


Guava and Pineapple Cordial

Add 90 grams diced pineapple, sugar, and guava puree to the blender. In a separate bowl add citric acid in hot water mixing until dissolved. Pour citric acid into blender with pineapple and guava. Blend until smooth then strain into a separate glass.

Make A Single Cocktail

Add 1 oz Pineapple Guava Cordial, 1.5 oz Dark or Aged Rum, and .75 oz Coconut Syrup into a cocktail shaker with ice. Shake, Shake, Shake. And pour into your favorite glass.

Top with a skewer of gold leaf-dusted Morello cherries.

Make A Party Pitcher!

Combine Guava Pineapple Cordial, Rum and Coconut Syrup into a blender, add ice, and blend! Pour into a pitcher or individual glasses and enjoy!
