This Duck breast is cured and driedfor 35 Days transforming it into Duck prosciutto. A special process of curing and drying the meaty breast of selected ducks produces a ham-like product that remarkably resembles the finest prosciutto. It should be sliced thin. If you remove some of the duck fat on top, preserve it and use it to cook your next steak... Superbe!
