While most commonly called “juice,” this flavorful liquid is actually a cuisson, a French term for cooking liquid. Made from the juice released by truffles cooked for bottling or canning purposes, it is intensely flavorful and a wonderfully useful ingredient. Incredibly versatile with a long shelf life, truffle juice is a great condiment to have on hand.
