Tomato Tart
Tomato Tart
A delightful, zesty tart that takes tomatoes to a superb new level. Serve it with a salad or other accompaniments of your choice for an elegant and flavorful summer meal.
Ingredients:

1 pie crust

4 ripe tomatoes

Salt with Provence Herbs (a dried mixture of thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf)

Dijon mustard

Olive oil
Method:

Place crust in a pie dish and make small holes with a fork to ensure even cooking. Cook for 5 minutes at 450°F. When finished, take out and let the crust cool.

Cover the bottom of the crust with dijon mustard.

Thinly slice the tomatoes and layer on top of the dijon base. Continue making layers with all of the tomatoes.

Sprinkle generously with herbs de Provence and salt.

Spray with olive oil then place in the oven at 450°F and cook for 20 minutes.

Briefly take out of the oven and cover with aluminum foil. Then cook for another 20 minutes.

Once again, remove the tart from the oven and take off the foil. Let cook for another 5 minutes with the oven door opened.
